3 turnips

8 carrots

3 parsnips

2 beets (yellow)

5 potatoes

1/4 cup olive oil

roasted garlic - 2-6 cloves

Preheat oven to 350. Peel and chop all veggies into bite size pieces. Place all the chopped veggies in a bowl and coat with olive oil, salt & pepper and garlic powder. Add some hot pepper flakes if desired. Pour the vegetables into a roasting pan and cook at high heat for about 50 minutes. Stir veggies and add more olive oil if needed.
