Mustard Roasted Brussel Sprouts

Mustard Roasted Brussel Sprouts 1 1/2 lbs of brussel sprouts 2 tablespoons of dijon mustard 1/4 cup of balsamic vinegar 1 red onion chopped salt and pepper 1/4 cup of olive oil 2 tablespoons of canola oil Boil water for steaming brussel sprouts in a medium sized saucepan. Meanwhile saute the red onion in a small frying pan with a little canola oil. Add salt and pepper Cut x's in the bottom of the brussel sprouts and steam for about 10 minutes. When they are steamed arrange them in a baking dish with the red onions, dijon mustard and basalmic vinegar. Stir to coat while adding olive oil. Bake at 350F for about 45 minutes. Can add grated parmesan if desired.
