Mushroom Stuffed Acorn Squash 1 medium sized acorn squash 1 lb of chopped mushrooms oilve oil salt and pepper Halve the acorn squash and remove seeds. Place the acorn squash in a baking dish skin side down. Add 1/2 cup water to the bottom of the pan. Add sliced mushrooms and olive oil and salt and pepper. Bake at 350F for about 50 minutes. Squash is ready when it is softened.
