Lingcod and Sauerkraut
    Recipes for Locally Grown Foods


2 filets of choice lingcod

1 red onion

4 garlic cloves

1 pound sauerkraut

1/4 cup olive oil


Preheat oven to 300F degrees. Rinse and drain sauerkraut and spread it over the bottom of a shallow baking dish. Lay fish fillets over the top of the bead of sauerkraut. Slice onion into think slices and place over fish. Crush garlic and over the fish. Drench with olive oil and sprinkle with thyme and dill. Bake for 20 to 30 minutes (until fish is moist and flakey).
